I have a little array of potted herbs nestled near my patio door – chives, two kinds of basil, parsley, oregano, thyme and mint … oh, and catnip for my darling kitties to wig out on – so last night I decided to highlight most of them in a nice big salad
I did it! I concocted a stuffing recipe to accompany beef … quite good and certainly worth making again with a few, flavor tweaks.
For some reason, I have accumulated several boxes of Mrs. Cubbison’s stuffing mix in my pantry … This is when being able to cook creatively out of one’s cupboards comes in handy – with that much stuffing to use, it’s important to be able to change up the flavors a bit.
I recently tweeted a great quote from Victor Hugo, who was talking about the creative process in his writing,
“When you get an idea into your head you find it everywhere.”
Not only does this truly apply to the creative process, it is a stellar example of what is meant by the “law of attraction.” When we exude positive energy, we attract positive energy back to us.
We used these pickles as a side with sandwiches, skewered them instead of olives for our martinis, and put heaping bowls of them out as appetizers and condiments with meals.
The natural world has many lessons to teach us if we are willing to listen and learn. I have discovered that spending time outdoors with heightened awareness can bring deep insights. This kind of awareness can be cultivated but is particularly easy to do when relaxed and on vacation.
This is one of my “booke” dishes because you add, substitute whatever you want, as long as the nutritional value is high. Otherwise, you are leaving the “super food” category for a regular ol’ salad.

For the last several months and well before the celebration of the Beatles 50th Anniversary (just so you know I wasn’t getting a subliminal message from all the media hoopla around that event), I consistently have heard the words “let it be” during my daily meditation.
Recently, I have been reflecting upon our 4th Chakra – the heart chakra – located at the center of the chest and the connection or segue point between our upper 3 and lower 3 chakras. Anodea Judith’s book, Wheels of Light, has been one of my study sources. I particularly like some things she says about Love, one of the main aspects of the 4th Chakra, along with unity and healing.
