Crock Pot Meatballs

Sorry, friends. I fell of the grid for a couple of weeks. Holiday times can do that to you. Don’t you agree?

So much of everything – eating, drinking, traveling, socializing and, oh, then there’s the small issues of work and taking care of the business of everyday life tucked into this maze of holiday haze. No wonder the news reports that there is a lot of frustration and anger in people at this time of year. It sort of defeats the purpose of the season.

Well, I am offering a little ease today with this super simple, deeply delicious dish that you can whip up for that holiday potluck with friend, office party or family gathering.

My sister-in-law Marion made these meatballs for one of my mom’s many birthday celebrations this past summer. It was so good, my family requested it again when we gathered with her and my brother Ed for Thanksgiving last month. And guess what? I have guests coming over tomorrow night and these little gems are on the menu.

Crock Pot Meatballs

3-4 lbs. cooked meatballs
3 cans mushroom soup
16 oz. jar cheese whiz
1 medium onion, chopped
1 package of sliced mushrooms

Put all ingredients in a Crock Pot; cook on Low for 6-8 hours.

Serve as an appetizer, main course or part of a buffet spread!

Too easy? I say, a recipe like this is perfect for this busy season.

Happy Holidays! Eat well. Be happy.
